On this exciting culinary and cultural tour of Sri Lanka with renowned chef, restauranteur and TV personality Peter Kuruvita, you'll gain an unprecedented behind the scenes introduction to the people, places and produce that make up Sri Lanka’s mixing pot to learn first hand how Sri Lanka first ignited Peter's passion for food. From learning the art of traditional Sri Lankan chatty pot cooking, to making egg hoppers and traditional Sri Lankan cocktails and enoying a jungle BBQ under the stars on the edge of the UNESCO World Heritage listed Sinharaja Rain Forest, this tour has it all, and more.

From the seafood markets and palm fringed west coast, we travel to the regions of Dambulla and continue to the rock fortress of Sigiriya before heading to the hill town of Kandy with its splendid botanical gardens and lush tea plantations. In Ella, we stay on a scenic 98 acre tea estate, surrounded by a stunning landscapes, and in Dambulla, we stay at the beautifully appointed Geoffrey Bawa designed Kandalama Hotel.

You will arrive into Sri Lanka just before midnight. (Recommended flight is SQ468 departing Singapore at 2240 and arriving into Colombo at 2355 or direct Sri Lankan Airlines flight from MEL arriving Colombo around 1030). You will be met and transferred to your hotel in Negombo. Overnight Jetwing Lagoon Hotel.

This morning, even though we had a late arrival we will have an early wake up and head out to the hustle and bustle of the Fisheries Harbour, known as Lellama. We will visit the Fish Market and experience the fish auctions, where Peter will jump straight in to buy his catch for our dinner. We'll then head to the beach to witness the production of dried or salted fish which is a big industry in Sri Lanka. We'll return to our hotel and in the afteroon we will discover the mix of cultural influences that have shaped Negombo, including the Dutch canals where we will witness local village life. This evening we'll join Peter and the hotel chefs for our very first cooking experience, preparing our fish purchased from this morning's auction. Overnight Jetwing Lagoon Hotel.

Today we leave for the drive to the regions of Dambulla. Our lunch en-route today will be at the local Saruketha Restaurant where Peter, with celebrated local Chef Michael, will introduce you to some of the local flavours of the region. Upon reaching Dambulla, we'll visit the main fruit and vegetable market where we'll purchase ingredients for a special meal we'll prepare tomorrow. We then head to the beautiful Kandalama Hotel, designed by the famous Sri Lankan architect Geoffrey Bawa, and dine within the natural rock caves in the vicinity of the Kandalama Region. Our dinner will be interpreted by Peter and the executive chef of the hotel. Overnight Kandalama Hotel.

A day with a difference today where we head to a nearby village and prepare, with the local women, the meal for the Buddhist monks at the Aaryanya Senyasana Monastery. The meal will be served to the monks by midday. After a short blessing, we'll return to the hotel to freshen up before venturing out to explore the the rock fortress of Sigiriya, a Royal Citadel for 20 years in the 5th century AD and built by King Kasyapa. We'll return to our hotel for traditional Sri Lankan cocktails and cocktail snacks known as "Savory Kokis" and crispy "Dagara Murukku." Overnight Kandalama Hotel.

After breakfast we commence our journey towards Kandy, stopping en-route to explore and visit the spectacular Cave Temples of Dambulla. We stop in the Mathale region and visit oldest commercialised spice gardens in the region where we learn about Sri Lankan herbs and spices and join in to help prepare our lunch, cooking in clay pots, using the freshest herbs, spices and vegetables. We'll continue on to Kandy in the afternoon for our overnight accommodation. Overnight Mahaweli Reach Hotel, Kandy

Sri Lanka's hill capital, stronghold of the Sinhala Kings, Kandy is the country's most beautiful town. Kandy is 488 metres above sea level and next to Colombo is Sri Lanka's most visited place. This morning we take a short drive out of Kandy (approx 40 mins) to the peaceful surrounds of Nelligala Mountain and visit the Nelligala Buddhist Temple. Returning to Kandy, we head to the Royal Botanical Gardens at Peradeniya where we will enjoy the botanical marvels of this superb setting (one of the finest of its kind in Asia with more than 5000 species of flora, and once the headquarters of Lord Mountbatten). The Gardens began as a pleasure garden for a Sinhala King. We will enjoy a picnic lunch the Gardens and listen to stories of days gone by from our hosts. We will return to our hotel for a rest and in the late afternoon/early evening Peter will join with local elders and everyone will have the opportunity to partake in a hands on cooking class where you will make the delicious and traditional kottu roti and famous egg hoppers. The results will be enjoyed as your dinner! Overnight Mahaweli Reach Hotel, Kandy.

After breakfast we visit the Temple of the Sacred Tooth Relic of Lord Buddha, where we explore this historic location of significant Buddhist influence. We then travel to the hill country of Nuwara Eliya where we'll visit the Pedro Tea Plantation to meet with pickers and learn about the different stages of tea production. We head to the Grand Hotel, our overnight accommodation, where Peter and the chefs of the Grand Hotel will present a coconut oriented High Tea. The evening is at leisure to relax and soak up the old world surrounds of your hotel. Overnight Grand Hotel, Nuwara Eliya.

After a slightly early breakfast we travel to Ambewala, one of the most scenic regions of Nuwara Eliya. We'll get a behind the scenes look at the Ambewala and New Zealand Farms where we'll witness the production of milk, cheese, yoghurt and cattle. We'll then return to the Grand Hotel where we will go direct to the hotel farm and pick and collect the fresh produce we need for our lunch today. We'll then join Peter and the chefs of the Grand Hotel to prepare our lunch in their state of the art kitchen. Peter will also demonstrate and prepare a Tea Infused dessert. We'll enjoy lunch and free time in the afternoon before getting together in the early evening to join Peter and the Grand Hotel Bar Team to create some memorable tea infused cocktails and mocktails. Overnight Grand Hotel, Nuwara Eliya.

We have a relaxed morning and then take a unique train journey to Ella (approx 3 hours). We'll travel in 2nd or 3rd class through one of the most scenic regions in the country. Our accommodation in Ella is at the beautiful 98 Acre Resort, set amidst the hills surrounding Ella. In the late afternoon we'll meet for a one hour yoga, relaxation and reflexology experience. A fantastic way to unwind after a day of travel. Overnight 98 Acre Resort, Ella

We'll enjoy an early morning walk to nearby Little Adams Peak which offers breathtaking views to the surrounding hills and valley below. We return to our hotel for breakfast and head towards the regions of Udawalawe. Enroute we stop at the MJF Charitable Foundation where we will participate in preparing a traditional southern Sri Lankan meal for our lunch. Following lunch, our next stop is Uda Walawe National Park. This park is approximately 30,821 hectares and lies within the Ratnapura and Monaragala Districts. It acts as the catchment to the Uda Walawe Reservoir and is located in the Dry Zone. This Park comprises grasslands and thorn scrubs and many valuable species of trees are found within it. Large herds of elephants and deer species such as spotted deer, sambhur, barking deer and langur, wild boar, water buffalo, jackal are some of the prominent wild animals found in this Park and a variety of avifauna is seen. After our safari we head to the comfort of our nearby hotel. Overnight Grand Udawalawe or Centuria Wild Hotel, Udawalawe.

This morning we visit the nearby Elephant Transit Home for baby elephants who have lost their homes or are sick or injured, are protected and rehabilitated before being released back into the National Park. We then travel across the lowlands to the stunning Deniyaya Rainforest Eco Lodge, bordering the UNESCO World Heritage listed Sinharaja Rain Forest where many endemic and globally threatened species have been recorded and can be observed in and around the area including the Sri Lanka Blue Magpie, Loris Massmulla, Giant Squirrel, Toque Monkey, Fishing Cat, and Asian Elephant. All the lodges have been beautifully converted into stunning accommodation from old shipping containers. In the evening, a jungle BBQ concept dinner will be prepared by Peter and the chefs from Deniyaya Rainforest Eco Lodge.

We wake in the early morning to venture out to the edges of the edges of the Sinharaja Rain Forest on a stunning nature walk before returing to the lodge for breakfast. We'll then travel towards Galle on the south west coast. Galle is a port city, standing on one of the main sea routes in the southern part of the city. It has a unique charm among the many historic places in Sri Lanka. The Dutch built the 1st Protestant church in Sri Lanka here, and it is also famous for its Dutch Fort, a world heritage listed site. This evening has been set aside for your leisure. Overnight Amari Beach Hotel, Galle

After a relaxed breakfast, we'll travel to the fish markets near Galle and near to where the fishing nets are drawn in to purchase some fresh fish, directly from the nets or from the fish vendors. We'll then head to Habaraduwa Waligama, which is a popular spot for the stilt fishermen to haul in their daily catch. We then set up our own mobile kitchen by the beach and cook a sumptuous Sri Lankan South Fish Curry and Rice for lunch in the shade of the coconut palm trees. After lunch we then head into Galle to enjoy a walking tour of the historic Galle Fort. The evening is at your leisure. Overnight Amari Beach Hotel, Galle

Today we travel to Colombo where we will have lunch at the Geoffrey Bawa influenced Gallery Cafe. This evening we'll have join for an amazing farewell meal at the Ministry of Crab, where you'll enjoy mouthwatering seafood delights. Overnight Cinamon Lakeside Hotel, Colombo.

About Your Leader

Award-winning chef and restaurateur, Peter has diversified his career to also encompass the roles of TV presenter, author, culinary tour guide and food & beverage consultant.

Peter is well known for his time at Sydney’s iconic Flying Fish Restaurant & Bar which he opened in 2004, and successfully led the kitchen team as Executive Chef & co-owner for 8 years.

In 2008, Peter’s love of the Pacific & passion for seafood led to the opening of Flying Fish Fiji situated on the beachfront at Sheraton Fiji Resort. Featuring Peter’s signature dishes and guidance, the restaurant became Fiji’s premier dining destination for over 10 years until the recent acquisition of Sheraton Fiji Resort by Marriot Hotels.

In 2014, Peter established all food operations, kitchen design, menu design and systems for the opening of Sheraton Resort & Spa, Tokoriki Island, Fiji, overseeing operations for 4 years.

Peter can be most often found in his hometown Noosa, Australia where he opened Noosa Beach House in 2013, in partnership with Sofitel Noosa Pacific Resort. Situated on iconic Hastings St, opposite Noosa Main Beach, the open terrace and bar has a relaxed holiday vibe and evolves into a stylish fine dining restaurant and cocktail bar as the day progresses. The menu features his signature style of Sri Lankan spices, world flavours and focus on local seafood

Peter is culinary advisor to Infinity Pacific Charters, Sydney’s newest luxury superyacht charter, designing bespoke menus for intimate charters or corporate events.

Peter’s childhood experiences cooking with his Grandmother in the traditional kitchen of his ancestral home in Colombo, Sri Lanka inspired his first cookbook “Serendip – My Sri Lankan Kitchen”

His next cookbook “My Feast with Peter Kuruvita” takes food lovers on a culinary and cultural journey through the island communities of Asia and the South Pacific.

Peter’s 3rd cookbook ‘Lands of the Curry Leaf’ – A vegetarian journey through the Subcontinent – was published by Murdoch Books in 2018.

Peter has now presented 5 TV series produced by The Precinct Studios for SBS Television, which air on many networks worldwide. His shows combine beautiful scenery with sensational local cuisine
